  • 1 cup whole-milk ricotta cheese
  • 1/4 lb. fresh mozzarella cheese, shredded
  • 4 Tbs. grated Parmigiano-Reggiano cheese
  • 1 Tbs. chopped fresh flat-leaf parsley
  • Olive oil for brushing
