- ml `00' flour or strong plain (all-purpose bread) flour, plus extra to dust
- 250 softened butter, cut into pieces
- g extra virgin olive oil, plus extra to brush and drizzle
- 25 potatoes
- g salt and freshly ground black pepper
- 3 small onion, thinly sliced
- tbsp courgettes (zucchini), thinly sliced
- 500 artichokes preserved in oil, sliced (reserve 2 tbsp of the oil)
- g spinach
- 1 eggs
- pinch Parmesan, grated
