Smoked cod scotch eggs recipe

INGREDIENTS

• 2 slices of stale bread, soaked in water
• 2 garlic cloves
• 1 lemon, zest and juice reserved
• 200 olive oil
• ml salt
• 1 smoked cod
• pinch large floury potatoes, peeled
• 500 light olive oil
• g quail eggs
• 4 eggs
• 50 flour
• ml breadcrumbs
• 12 splash white wine vinegar
• 2 vegetable oil, for frying
