- Zest and juice of 1 lemon
- 1 stick butter, cut into small pieces
- 1 cup ricotta salata cheese, or Parmesan, coarsely grated
- 2 tablespoons fresh chives, or scallion greens, thinly chopped
- Salt and pepper
