  • 9 Tbs. chilled unsalted butter
  • 6 Tbs. ice water
  • 3 Tbs. unsalted butter
  • 1/4 cup granulated sugar
  • 3 or 4 firm, ripe winter Nellis or Bosc pears
  • (about 2 lb. total), peeled, halved and cored
  • 1/2 cup firmly packed brown sugar
  • 2 Tbs. finely chopped crystallized ginger
  • 1 Tbs. fresh lemon juice
  • 1/2 tsp. ground mace
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
