  • 400 cornflour (cornstarch), for dusting
  • g sesame seeds
  • 1 chopped coriander (cilantro) or sliced spring onion (scallion), to serve
  • tbsp Kewpie (Japanese) mayonnaise, to serve (optional)
  • 2 light soy sauce
  • tsp sake (Japanese rice wine) or substitute a dry sherry
  • 1 mirin (sweet rice wine)
  • cup caster (superfine) sugar
