  • 3 shallots, peeled
  • 2 tablespoons olive oil or melted clarified butter
  • fine grain sea salt
  • 4 medium cloves garlic, peel on
  • 12 kale leaves, washed & dried well, de-stemmed & cut into 3-inch strips
  • 1 1/2 cups / 9 ounces uncooked orzo pasta
  • 1/2 cup / 120 ml plain yogurt
  • For serving: slivered scallions, fresh oregano, toasted nuts or seeds
