- 4 cups grated sharp cheddar cheese (10 ounces)
- 1 1/2 cups grated Gruyere cheese (4 ounces)
- 1 1/2 cups grated fontina cheese (4 ounces)
- Coarse salt and freshly ground black pepper
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 pound elbow macaroni
