- 150 ml red wine vinegar
- 50 ml Worcestershire sauce
- 2 tablespoons coriander seeds, coarsely ground
- 1 tablespoon black pepper, coarsely ground
- 500 g fine sea salt
- 150 g brown sugar
- 1 teaspoon bicarbonate of soda
