  • 1 yellow onion, thinly sliced
  • 4 cinnamon sticks
  • 1 whole star anise
  • 5 garlic cloves, crushed and thinly sliced
  • 2 tsp. Asian chili garlic paste
  • 4 cups chicken stock or low-sodium chicken broth
  • 1/2 cup soy sauce
  • 2 lb. beef blade steak, trimmed and cut into slices 1/4 inch thick
  • 5 baby bok choy, about 1 1/2 lb. total
  • 1 Tbs. kosher salt, plus more, to taste
  • 1 1/2 lb. fresh Chinese wheat noodles
  • 4 green onions, thinly sliced
