  • 8 large eggs
  • 2 cups plus 2 Tbs. sugar
  • 1/4 cup cornstarch
  • 1 cup fresh Meyer lemon juice
  • 1/4 tsp. fine sea salt
  • 4 Tbs. unsalted butter, cut into tablespoons
  • Finely grated zest of 3 Meyer lemons
