- 1/2 lb. tomatillos, husks removed and quartered
- 1 or 2 jalapeño chilies, seeded and coarsely chopped
- 1/4 cup water
- 1/2 small white onion, halved
- 1/4 cup fresh cilantro leaves and cut-up stems
- 1 tsp. salt
- 1 avocado, halved, pitted, peeled and diced
- 3 dried ancho chilies
- 1 1/2 Tbs. canola oil
- 1 yellow onion, finely chopped
- 1 green bell pepper, seeded and finely chopped
- 3 garlic cloves, finely chopped
- 1/2 cup lager-style beer
- 1 Tbs. sherry vinegar
- 2 plum tomatoes, seeded and coarsely chopped
- 1 1/2 tsp. ground cumin
- 3 lb. beef short ribs, English cut, trimmed of most fat
- Salt and freshly ground pepper, to taste
- 1/2 tsp. dried oregano
- 12 corn tortillas, each about 6 inches in diameter
- 1/4 cup coarsely chopped fresh cilantro
