DESCRIPTION

This is a copycat version of Panda Express Fried Rice. If you use leftover, cooked white rice, skip step 1.



INGREDIENTS

  • 1 cup long grain rice, uncooked (or 2 cups leftover cooked rice)
  • 2 cups water
  • 2 eggs, beaten
  • 3 tablespoons butter, divided use
  • 1 cup frozen peas and carrot, thawed
  • 1/4 cup white onion, diced
  • 2 tablespoons soy sauce
  • 1/4 teaspoon sesame oil (or more to taste)
  • 1/8 teaspoon white pepper, ground
  • 1/8 teaspoon table salt (or to taste)
  • 1 green onion, diced (including green tops)
