- 3 to 4 tablespoons ice water
- 1/4 teaspoon almond extract
- 8 to 9 large peaches (about 2 3/4 pounds), pitted and sliced about 1/2 inch thick
- 3/4 cup granulated sugar
- 1 1/2 tablespoons cornstarch
- 1/4 teaspoon ground Saigon cinnamon
- 1 large egg
- 1 tablespoon water
- 1 tablespoon turbinado or granulated sugar for garnish
