Lamb shank pie recipe

INGREDIENTS

• 4 lamb shanks
• 4 plain (all-purpose) flour, for dusting
• tbsp olive oil
• 4 butter
• tbsp carrots, diced
• 40 celery stalks, diced
• g onions, diced
• 3 garlic cloves, roughly chopped
• 2 veal stock
• 2 red wine
• 5 bay leaves
• 250 sprigs thyme, leaves picked
• ml salt and freshly ground black pepper, to taste
• 375 flat-leaf (Italian) parsley, finely chopped
• ml sheets puff pastry
• 2 egg, lightly beaten for egg wash
