Maple & mustard glazed ham

INGREDIENTS

• 1 whole leg of gammon , smoked or unsmoked, around 5kg weight bone-in
• 1 cinnamon stick
• 1 tsp peppercorns
• 1 tsp coriander seeds
• 2 bay leaves
• about 25 whole cloves
• 200ml maple syrup
• 2 tbsp coarse-grain mustard
• 2 tbsp Worcestershire sauce
• 2 tbsp soy sauce
