  • For the Indian Fish:
  • 6 fillets Swai (or Tilapia, Orange Roughy…)
  • 1 Tb. olive oil
  • 3 Tb. Garam Masala
  • Salt and Pepper
  • For the Curried Cauliflower:
  • 2 Tb. butter
  • 2 Tb. flour
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 ½ cups chicken stock
  • 2 heads cauliflower, cut into small florets
  • 3 Tb. Madras Curry Powder
  • ¾ cup heavy cream
  • 1/3 cup apricot preserve
  • ¼ tsp. cayenne pepper
  • ¼ cup chopped cilantro
