INGREDIENTS

• For the pastry:
• 2 1/2 cups all-purpose flour
• 1/2 tsp. salt
• 16 tablespoons (2 sticks, 8 ounces) unsalted butter, cut into
• pieces
• 1/2 cup sour cream
• 4 teaspoons fresh lemon juice
• 1/2 cup ice water
• For the filling:
• 2 pounds of peaches
• 1/4 cup flour
• 1/4 cup sugar
• Pinch of salt
• 1 teaspoon bourbon
• 1/2 teaspoon vanilla extract
