INGREDIENTS

  • • 1 teaspoon baking soda
  • • 1 teaspoon pure vanilla extract
  • • ½ cup honey
  • • 3 cups all purpose flour
  • • 1 ½ cups finely grinned toasted walnuts
  • • 2 tablespoons of good dark rum or (even better) 1½ teaspoons pure rum extract.
  • • ¼ teaspoon salt
  • • zest of 1 large lemon
  • • 1 cup superfine sugar
  • • 2 extra large eggs room temperature
  • • ½ cup butter (1 stick room temperature)
  • • ½ cup granulated sugar
  • • 4 cups sour cream (drained over night in a strainer lined with Cheese cloth)
