DESCRIPTION
Our chopped challenge this week was to make a dish that made us forget that seitan is often used as a meat substitute. Battering the seitan in a cola batter gave depth and sweetness and pairing it with tomato sauce and mozzarella made us forget that this is usually for vegetarians. Chopped Basket Ingredient: Seitan
INGREDIENTS
- 1/2 cup cola
- 8 ounces shredded mozzarella
- Kosher salt and freshly ground black pepper
- 1 cup vegetable oil
- 1/2 cup all-purpose flour
- 4 cloves garlic, finely chopped
- 2 tablespoons extra-virgin olive oil
- 4 hero rolls, split in half
- 4 teaspoons chopped fresh oregano
- One 28-ounce can whole tomatoes in juice, pureed in a blender
- 1 1/2 pounds seitan
- 3/4 cup finely grated Parmesan
