  • 1 tablespoon baking powder

  • 1 1/2 teaspoons ground cinnamon
  • 1 tablespoon orange zest, finely minced
  • 1/2 cup ground walnuts
  • 1/2 cup unsalted butter, cut into chunks
  • 1 cup buttermilk
  • 1 large egg
  • 1 1/2 teaspoons pure vanilla extract
  • 1 cup shredded carrot
  • 1/2 cup golden raisin (or minced dried pineapple)
  • 1/2 cup cream cheese, softened (4 oz.)
  • 1 1/2 to 2 c. powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 3/4 cup toasted coconut
  • shredded carrot
  • orange zest
  • ground cinnamon
