- 2 cups water
- 1/4 cup roasted peanuts
- 1 tablespoon butter
- 1 onion, sliced thinly
- 1 teaspoon gingerroot, minced
- 3/4 cup grated carrot
- salt
- pepper
- cilantro, to garnish (optional)
