INGREDIENTS

  • 2 tablespoons olive oil or 2 tablespoons vegetable oil
  • 6 medium onions, cut into quarters
  • 1 medium butternut squash, peeled, seeded and cut into 1 1/2-inch cubes (about 3 pounds)
  • 1 (3 lb) boneless beef brisket
  • 1 3/4 cups beef broth or 1 3/4 cups beef stock
  • 1/2 cup orange juice
  • 1/2 cup dry red wine
  • 1/2 cup packed brown sugar
  • 1 (28 ounce) can whole canned tomatoes
