  • 1/4 cup chopped onion
  • 4 ounces chicken sausage with jalapeño peppers, chopped
  • 2 large eggs, lightly beaten
  • 1/2 cup (2 ounces) shredded Monterey Jack cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped seeded jalapeño peppers
  • 1 large egg white, lightly beaten
