• 4 Tablespoons Butter
• ½ cups Shallots, Chopped Finely
• 3 cloves Garlic, Minced
• ¼ cups All-purpose Flour
• 3 cups Milk
• 2 cups Aged Gouda, Shredded
• 2 cups Beechers Flagship Cheese (can Substitute Sharp White Cheddar), Shredded
• ½ teaspoons Cayenne Pepper
• 12 ounces, weight Elbow Macaroni
• 1 Tablespoon Olive Oil
• 1 bag Baby Spinach (5.5 Ounce Bag)
• ½ teaspoons Salt
• ½ teaspoons Ground Black Pepper
• 1 cup Panko Breadcrumbs
