When my partner AJ entered the house while this was baking, his eye lit up. The smell is pretty intoxicating, one part autumnal spices, one part fresh baked baked good, and one part sugary sweet nuttiness. At the core of it though is a quick batter bread
INGREDIENTS
- 3/4 cup (85 g) walnuts
- 1/2 cup (115 g or 1 stick) unsalted butter
- 2 tablespoons walnut oil or olive oil
- 1 cup (220 g) dark brown sugar
- 2 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 2 large eggs
- 1 cup (150 g) whole wheat flour
- 1 cup (140 g) all purpose flour
- 1/2 cup buttermilk
- 2 cups peeled and chopped Granny Smith apples
