Description

Rest in peas, a creamy dish with tombstone croutons, will rouse the appetites of even vegetable-averse children.

Ingredients

  • 1 onion, cut into 1/2-inch pieces
  • 1/2 cup heavy cream
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 cup all-purpose flour
  • 1/4 cup extra-virgin olive oil
  • 2 1/2 cups milk
  • 2 boxes (10 ounces each) frozen peas, thawed and drained well
  • 4 slices white sandwich bread
  • 4 tablespoons unsalted butter
  • Coarse salt and freshly ground pepper
  • Pinch of cayenne pepper
