DESCRIPTION
Tamale pie is a holdover from America's first flush of romance with Mexican cuisine. The love affair hasn't let up -- not with the lure of cornbread, cheese, and chili, even when made with turkey.
INGREDIENTS
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped (2 cups)
- 1 green bell pepper, chopped
- 2 teaspoons coarse salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon chopped fresh oregano
- 1 teaspoon ground cumin
- 1 pound ground beef chuck
- 1 tablespoon tomato paste
- 1 (15.5-ounce) can whole peeled plum tomatoes
- 1 cup fine cornmeal
- 3 ounces Monterey Jack cheese, grated
- 1 jalapeno, minced
- 2 ears yellow corn, kernels and milk stripped from cobs
