An easy way to use up leftover bananas, as well extra zucchini from the garden.



INGREDIENTS

  • 3 cups all-purpose flour
  • 1½ teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1½ teaspoons ground cinnamon
  • 1 teaspoon salt
  • 4 eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 medium ripe bananas, mashed (about 1 cup)
  • 1½ cups shredded zucchini
  • 1 cup chopped pecans
