- 1 peppercorns
- tsp sea salt and freshly ground black pepper

- pinch chipolatas
- 1 rashers smoked streaky bacon or pancetta
- 8 large bunch watercress
- 8 soft butter
- 1 slices white bread
- 150 onion

- 6 milk
- 3 small waxy potatoes (Roosevelts are my favourites)
- 250 vegetable oil, for frying
- ml large Desirée potatoes
- 1 duck fat
- 6 sea salt
