Mushroom Spinach & Gruyere Crustless Quiche

INGREDIENTS

• 1 6-oz. bag of baby spinach
• 2 tablespoons olive oil
• 2 cups chopped mushrooms (1 8-oz. package of mushrooms yields about this much coarsely chopped)
• 1 garlic clove, minced
• Salt and pepper
• 3 large eggs
• 1 cup half-and-half
• 1 cup shredded Gruyere cheese
