  • 3 eggs
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini, drained and water squeezed out
  • One 8-ounce can crushed pineapple, well drained
  • 1 cup chopped dates
  • 1 cup chopped walnuts
