Banana Cream Pie

INGREDIENTS

• Basic pie dough for a single-crust pie, (see recipe at left)
• 3 cups whole milk
• 1/3 cup cornstarch
• 4 large egg yolks
• 2/3 cup sugar
• 1/8 tsp. fine sea salt
• 1 vanilla bean
• 2 Tbs. unsalted butter, cut into tablespoons
• 2 large bananas, peeled and thinly sliced
• 1 cup heavy cream
• 2 Tbs. granulated sugar
• 1/2 tsp. vanilla extract
• 6 oz. semisweet chocolate, shaved into curls using a vegetable peeler (optional)
