  • 1/2 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 2 Tbs. firmly packed light brown sugar
  • 1 Tbs. chopped fresh thyme
  • 1/4 cup plus 1 Tbs. olive oil
  • Kosher salt and freshly ground pepper, to taste
  • 2 1/2 lb. small peaches, pitted and halved
  • 3 or 4 fresh oregano sprigs
