  • 1 egg yolk
  • 2 Tbs. very cold water
  • 1 tsp. vanilla extract
  • 1 1/4 cups unbleached all-purpose flour, plus more for dusting
  • 1/3 cup sugar
  • 1/4 tsp. salt
  • 8 Tbs. (1 stick) cold unsalted butter, cut into 1/4-inch cubes
  • 3/4 cup blanched almonds, lightly toasted
  • 1/3 cup plus 2 Tbs. sugar
  • 1/8 tsp. kosher salt
  • 1 egg, lightly beaten
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • 1 Tbs. unsalted butter, melted
  • 4 Granny Smith apples, cored, halved lengthwise and sliced 1/4 inch thick on a mandoline
  • 1 Tbs. fresh lemon juice
  • 1/4 cup apricot preserves, warmed and strained through a fine-mesh sieve
