Strawberry-Rhubarb Pie

INGREDIENTS

• 2 rolled-out rounds of basic pie dough (see

• 1 cup sugar
• 2 Tbs. cornstarch
• 2 Tbs. quick-cooking tapioca
• Pinch of salt
• 3 cups strawberries, hulled and quartered
• lengthwise
• 3 cups rhubarb, trimmed and sliced 1⁄2 inch
• thick (4 or 5 stalks)
• 1 Tbs. cold unsalted butter, cut into small pieces
