  • 4 Tbs. (1/2 stick) unsalted butter
  • 2 yellow onions, diced
  • 4 celery stalks, diced
  • 1 large fennel bulb, trimmed and diced
  • 1/2 cup white wine
  • 2 cups prepared French chestnuts, roughly
  • chopped
  • Salt and freshly ground pepper, to taste
  • 1 1/4 lb. mild Italian sausage, casings removed
  • 6 Tbs. chopped fresh flat-leaf parsley
  • 3 to 3 1/4 cups chicken stock, warmed, plus
  • more as needed
