- g Chopped fresh thyme
- 1 Olive oil
- tsp Shallots - peeled and cut in half lengthways
- 4 Runny honey
- tbsp 200g Fillets of hake, skin on and boned
- 8 Juice and zest lemon
- 2 Clove garlic, chopped finely
- tbsp New potatoes, boiled until tender, cooled then sliced in half and griddled
- 4 Fresh peas, podded and blanched
- 1 White wine vinegar
- 10 Fresh spinach
- 200 Sugar - Pea dressing
- g Salt and freshly ground pepper
