• 300 double cream
• ml bunch fresh dill, roughly chopped
• 0.5 sea salt to taste
• 1 side of fresh organic salmon, pin boned with skin on
• pinch rock salt
• 1 Demerara sugar
• 500 freshly crushed black pepper
• g crushed coriander seed
• 500 crushed fennel seed
• g bunch of fresh dill, roughly chopped
• 25 large white onions
• g free-range organic eggs
• 25 olive oil
• g large Desiree potatoes, peeled
• 25 sea salt & freshly ground black pepper to taste
