- 75 g (1/2 cup) whole wheat flour
- 115 g (3/4 cup) all purpose flour
- 1/2 teaspoon finely ground sea salt
- 1 tablespoon white sugar
- 140 g (1/2 cup plus 2 tablespoons or 1 1/4 sticks) unsalted butter
- 2 tablespoons cup ice water
- 2 tablespoons dark rum
- 1 lb 5oz Okinawa purple sweet potato (3 small ones)
- 9 oz orange yam/sweet potato (1 large one)
- 1 cup plain full fat yogurt
- 1/4 cup dark rum
- 1/2 cup dark brown sugar
- 1/4 cup white granulated sugar
- 1/2 teaspoon cinnamon
- 1 vanilla bean
- 3 large egg yolks
- 1 large egg
- two generous pinches of red Hawaiian sea salt (or other sea salt)
- 180 g (1 1/2 cups) macadamia nuts, chopped
- 1 tablespoon macadamia honey (or other honey)
- 1 large egg white plus 1 tablespoon water
