Hawaiian style sweet potato pie, featuring American Orange Yams and Okinawa Purple Sweet potato with Macadamia Nut

INGREDIENTS

• 75 g (1/2 cup) whole wheat flour
• 115 g (3/4 cup) all purpose flour
• 1/2 teaspoon finely ground sea salt
• 1 tablespoon white sugar
• 140 g (1/2 cup plus 2 tablespoons or 1 1/4 sticks) unsalted butter
• 2 tablespoons cup ice water
• 2 tablespoons dark rum
• 1 lb 5oz Okinawa purple sweet potato (3 small ones)
• 9 oz orange yam/sweet potato (1 large one)
• 1 cup plain full fat yogurt
• 1/4 cup dark rum
• 1/2 cup dark brown sugar
• 1/4 cup white granulated sugar
• 1/2 teaspoon cinnamon
• 1 vanilla bean
• 3 large egg yolks
• 1 large egg
• two generous pinches of red Hawaiian sea salt (or other sea salt)
• 180 g (1 1/2 cups) macadamia nuts, chopped
• 1 tablespoon macadamia honey (or other honey)
• 1 large egg white plus 1 tablespoon water
