INGREDIENTS

• 1 1/3 cups confectioner’s sugar, divided
• 1 teaspoon vanilla extract
• 1 cup plus 2 tablespoons sifted cake flour
• pinch of salt
• 4 large eggs, at room temperature
• 1 cup superfine white sugar
• 4oz bakers chocolate finely chopped
• 2 sticks plus 2 tablespoons unsalted butter, at room temperature.
• 1 cup superfine sugar
• 12 tablespoons water
• 8 teaspoons lemon juice
• 1 tablespoon neutral oil (e.g. grapeseed, rice bran, sunflower)
