- 1 cup quinoa
- ¼ c gluten free tamari
- Juice from ½ an orange (about ¼ c)
- 1 tablespoon unsalted butter
- 1 large English cucumber
- 2 small long eggplants, about 5-6" (I used Gretel variety from my raised bed, Fairytale eggplants are comparable or 1 slender long eggplant of a larger variety)
- 3 T chopped cilantro
- ¼ c canola oil
- 1 1/2 tablespoon white miso
- 1 cup water
- ¼ c balsamic vinegar
- 1 cup 2 % milk
- Olive oil for grilling
