  • 1 cup quinoa
  • ¼ c gluten free tamari
  • Juice from ½ an orange (about ¼ c)
  • 1 tablespoon unsalted butter
  • 1 large English cucumber
  • 2 small long eggplants, about 5-6" (I used Gretel variety from my raised bed, Fairytale eggplants are comparable or 1 slender long eggplant of a larger variety)
  • 3 T chopped cilantro
  • ¼ c canola oil
  • 1 1/2 tablespoon white miso
  • 1 cup water
  • ¼ c balsamic vinegar
  • 1 cup 2 % milk
  • Olive oil for grilling
