- 2 1/2 tablespoons coarse kosher or sea salt
- 3 celery stalks with leaves, chopped
- 2 tablespoons honey
- 9 to 10 garlic cloves, quartered
- 1 chili pepper of your choice (optional)
- 10 to 12 baby carrots, washed and sliced in half lengthwise
- 1/2 medium celery root, peeled and sliced
