- 1 tsp. oregano
- 1 tsp. kosher salt
- ½ tsp. nutmeg
- 2-1 lb. pork loins
- For the Esquite Stuffed Onion:
- 2 large sweet onions, peeled and halved
- 4 ears of corn, kernels removed
- 4 Tb. butter
- 5 oz. chevre
- ¾ tsp. paprika
- ½ of a lime
- Salt and Pepper
