INGREDIENTS

  • Meatballs:
  • 1 lbs ground turkey (You can also use ½ lbs beef and ½ lbs pork)
  • 1/3 cup dried bread crumbs
  • 3 tbsp chopped flat-leaf parsley
  • 3 tbsp grated Parmesan
  • 2 tbsp chopped garlic
  • 2 tbsp chopped oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 egg, beaten
  • pinch of ground nutmeg
  • pinch of paprika
  • pinch of allspice
  • Soup:
  • 2 tbsp butter
  • 3/4 cup chopped white onions
  • 3/4 cup chopped carrots
  • Ground black pepper, to taste
  • 4 cups chicken stock
  • 2 cups white wine (you can also use water if you prefer)
  • 1 (28 ounces) can whole tomatoes, drained and halved
  • 1 cup cooked pasta of your choice (I prefer angle hair pasta, you can also substitute white beans)
  • 2 cups shredded kale
