- 1 tablespoon apple cider vinegar
- Filling
- 1 tablespoon oil
- 2 mediums sweet potatoes peeled
- ½ medium white onion diced
- 1 clove garlic
- ⅓ cup water
- 1 medium red pepper diced
- 1 cup black beans drained and rinsed if using canned
- ½ cup fresh cilantro
- 1 teaspoon chipotle powder
- ½ teaspoon each salt and pepper
- Egg Wash
- 2 tablespoons water
- paprika for topping
