  • Zucchini Salsa:
  • 2 cups cubed zucchini
  • ½ medium red onion, roughly diced
  • 1 jalapeño, minced
  • 1 tablespoon lime juice
  • ¼ cup cilantro, minced
  • ¼ cup goat cheese
