INGREDIENTS

- 1 cup (2 sticks) unsalted butter, room temperature
- 2 1/3 cups plus 3 tablespoons superfine sugar
- 1 1/4 cups extra-dark cocoa powder, sifted
- 2 large eggs, room temperature
- 1 large egg yolk
- 1 1/3 cup plus 4 teaspoons all-purpose flour
- 1 1/2 cup plus 4 teaspoons cake flour (not self-rising)
- 1 tablespoon plus 1/4 teaspoon coarse salt
- 2 1/4 teaspoons baking powder
- 2 teaspoons baking soda
- 2 cups boiling water
- 1/2 cup canola or sunflower oil
