- 1 1/4 cups (1/3 of a 16-ounce bag) frozen cheese tortellini
- 2 teaspoons olive oil
- 8 ounces fresh shiitake mushrooms, stemmed, caps halved and thinly sliced
- 2 garlic cloves, sliced
- 1 cup water
- Coarse salt and ground pepper
- 3 tablespoons grated Parmesan cheese
- 1 tablespoon cold butter
- 1/3 cup chopped fresh flat-leaf parsley
