Here's a great combination of seafood and garden vegetable! People seem to like its nice color and texture...not to mention the wonderful flavor!
INGREDIENTS
- 1 tablespoon butter
- 1/2 cup finely chopped onion
- 1 can (6-1/2 ounces) light water-packed tuna, drained and flaked
- 1 cup seasoned bread crumbs, divided
- 1 cup shredded zucchini
- 2 Eggland's Best Eggs, lightly beaten
- 1/3 cup minced fresh parsley
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons canola oil
